Vinification
The manual harvest of the finest grape clusters is carried out exclusively in the “Prea” vineyard, which covers approximately 7.09 ha. Due to the vineyard’s high altitude—ranging from 560 to 610 meters above sea level—and the significant temperature variations between day and night, the harvest extends into late October. The vineyard’s name, Prea (meaning “stone” in the Veronese dialect), derives from its marl-limestone soil, particularly rich in Cretaceous-origin stones.The grapes undergo destemming and crushing, followed by fermentation in concrete tanks at a controlled temperature of 18–20°C. The wine is then aged for 2 years between concrete tanks and large oak casks. Additional six months of refinement in the bottle.
Gastronomy
Its minerality and acidity make it ideal to pair with elaborate dishes such as game, as well as with pasta dishes. Like its white sibling, it is also worth trying with Oriental cuisine, which favors wines that are savory and mineral-driven.
Sensory characteristics
Bright ruby red in color. On the nose, notes of raspberries, redcurrants, and small red berries are complemented by delicate hints of spice and medicinal herbs, creating a perfectly layered bouquet. On the palate, the wine is full-bodied and fresh, with perfectly integrated acidity. The minerality and acidity, derived from the limestone-rich soil, give it liveliness, along with extraordinary length and persistence.
