WINEMAKING
Crushing-destemming of the grapes.
A short cold soak on the skins.
Soft pressing and fermentation at controlled temperature between 12°-15°C.
FOOD PAIRING
Delicious with appetizers and grilled fish.
It provides a pleasing contrast to fresh cheese and goat cheese.
Best served at 8°-10°C.
SENSORY PROPERTIES
Straw yellow colour with gold highlights.
The aroma of apricot blends with a complex floral bouquet, especially jasmine.
On the palate, it is dry, with a nice mineral quality and flavours of white flowers and green fruits derived from the late harvest of the grapes.
Fresh and well balanced.
