WINE MAKING
After the harvest, the grapes are dried for at least 4 months with a resulting of at least 40% weight loss.
Fermentation temperature: 18°-22° C.
Maceration time: 30 days.
Aged in oak barriques for at least 30 months.
Maturation in bottles for 6 months.
PAIRING
Its dominant character requires spicy stewed meat, especially game, well-seasoned and goat cheese. If tasted alone, as a wine for meditation, it makes any evening enjoyable. It is advisable to open the bottle at least an hour before serving and decant.
Best served at 18°-20° C.
SENSORY PROPERTIES
Granet red color.
The hints of ripe plum and marasca cherry blend perfectly with notes of chocolate and leather, nutmeg and cinnamon in an ongoing surprising bouquet.
