WINEMAKING
After the harvest the grapes are dried on special racks for at least 4 months, during which they lose at least 40% of their weight.
Fermentation temperature between 18°-22°C.
Maceration time: 12 days.
Aged in oak barrels for: 6 months.
Bottle aged: 6 months.
FOOD PAIRING
Perfect wine for desserts made from both dark and milk chocolate, delicious with blue cheese, even spicy, but also try it alone or with a good Toscano cigar.
Best served at 12°-14°C
SENSORY PROPERTIES
At the sight it presents a ruby red with garnet reflections, dense, dark, with a nose full of sweet spices, cherries in alcohol and cinnamon, in the mouth it is sweet but incredibly fresh, with a silky and enveloping tannin, a pleasant and long finish.
