GRAPE VARIETIES
Corvina Veronese, Corvinone and Rondinella
WINEMAKING
Second fermentation on the lees of Recioto and Amarone.
Aged in oak barrels for 9 months, than bottle aged for other 6 months.
Fermentation temperature between 18°-22°C.
Maceration time: 20 days.
FOOD PAIRING
On the table it goes very good with classic roasts and pasta dishes with stuffed or baked pasta, try it with some flakes of Monteveronese cheese.
Best served at 16°-18°C.
SENSORY PROPERTIES
At the sight it has a deep ruby red color, with a good consistency, it is fragrant to the nose, with sensations of fruit jam that resembles plum and cherry, in the mouth it has a strong onset, an agile and structured half-mouth with a final of great softness.
