WINEMAKING
After the harvest the grapes are dried on special racks for at least 4 months, during which they lose at least 40% of their weight.
Fermentation temperature between 18°-22°C.
Maceration time: 30 days.
Aged in oak barrels for: 24 months.
Bottle aged: 6 months.
FOOD PAIRING
Among the greatest reds of the Italian tradition, it asks for dishes of great structure and depth, interesting pairing with cheeses of great seasoning, with aging it can be fascinating to combine it with dark chocolate as a meditation wine.
Best served at 18°-20°C.
SENSORY PROPERTIES
Of a thick and dense garnet red, the consistency of a great wine, an explosive nose of jammy fruit, spices and on the final notes of tobacco, in the mouth it is expressed with an intense onset, a half-mouth of great volume, an almost balsamic finish with a long-lasting persistent taste and ability to age.
