A short cold soak on the skins.
Soft pressing and fermentation at a controlled temperature between 14°-18°C.
The wine becomes bubbly inside low temperatures pressure tanks.
FOOD PAIRING
Perfect and enjoyable as aperitif but extraordinary with raw seafood.
Best served at 6°-8°C.
