WINE MAKING
After the harvest, the grapes are dried for at least 4 months with a resulting of at least 40% weight loss.
Fermentation temperature: 18°-22° C.
Maceration time: 30 days
Ageing in wood: 24 months, maturation in bottles for 6 months.
PAIRING
Its dominant character requires spicy stewed meat, especially game, well-seasoned and goat cheese. If tasted alone, as a wine for meditation, it makes any evening enjoyable. It is advisable to open the bottle at least an hour before serving and decant.
Best served at 18°-20° C.
CHARACTERISTICS
Intense ruby red with a garnet tinge.
The bouquet is complex and sumptuous.
The sweet initial notes of marasca cherry and jam are surrounded by spices and a delicate leather finish.
Full, round, strong and pleasant on the palate, it has a long and well-balanced finish.
