WINE MAKING
After the grapes are harvested, they are dried for at least 4 months with a resulting 40% weight loss, or more.
Fermentation temperature: 18°-22° C.
Maceration time: 20 days
Ageing in oak: 9 months, maturation in bottles for 6 months..
PAIRING
Very pleasant with meats, especially game and braised dishes.
Excellent with seasoned cheese which strongly enhance its character.
Best served at 18° C.
CHARACTERISTICS
Ruby red with a garnet tinge.
Initial hints of plum, cherry and black-colored berries are followed by notes of licorice and spices, with nutmeg and cinnamon standing out.
The palate is dry, very fine and elegant.
Full-bodied and with a long finish, it presents strong fruity and spicy retro-olfaction.
